Bringing the glamour to camping

If you are a camper that prefers real meals, not just hotdogs and stick-cooking, then you are likely to know all about the joy of campfire cooking with a skillet or a Dutch Oven. For those that are new to camping, it can be a little intimidating at first.

When you break the cooking down and set out a meal plan, you would be amazed at all the beautiful things you can make while indulging in the wilderness. Let’s face it; there aren’t many things better than a hot peach cobbler with a dollop of whipped cream next to a roaring campfire.

Campsite baking basics

The basics to achieving excellent campfire baked foods is a little patience and a camping dutch oven. Much like an ordinary Dutch Oven, these have narrow feet and a hanging handle. They’re made to withstand extreme temperatures.

These pots are perfect for baking as you can pile coals on top to form an oven-like atmosphere. If taking your baking skills from the kitchen to the campsite sounds like your forte, give these yummy recipes a try!

  1. Dutch Oven S’mores cake

This popular recipe is the perfect 10-minute dessert for anyone that loves traditional s’mores and easy desserts.

Ingredients

  • Angel food cake, pre-baked
  • 6 Chocolate bars
  • 2 packages Graham crackers
  • 1 medium package marshmallows

Method:

In a greased Dutch Oven place, a few torn up pieces of Angel Food Cake. Place broken pieces of the graham crackers on top of the cake. Cover the layer with chunks of chocolate and marshmallows. Feel free to layer the marshmallows and the chocolate. Cover the Dutch Oven and place it onto a hot grill or into the coals. Cook for 5 – 10 minutes, until marshmallows are golden and the chocolate is melty. Serve while hot and gooey.

Tip: Prep this alongside dinner, and pop it onto the coals while cleaning up the dinner plates.

  1. Dutch Oven Apple Cobbler

This is a classic campsite sweet treat! This recipe is not too sweet; it is comforting and best served hot.

Ingredients

  • 1 1/2 lbs cored and sliced apples
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon + 1 tsp cinnamon for the topping
  • 1 cup all-purpose flour (sub for gluten-free)
  • 1/4 granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter (use cold solid coconut oil or vegan butter for a vegan version)
  • 1/3 cup milk (sub for plant-based milk)

Method:

Campfire Prep: Line a Dutch Oven with parchment paper. Prepare the coals and the fire.

For the filling: Place the apple slices into the Dutch Oven and sprinkle with the brown sugar and 1 tbsp cinnamon. Fold the mixture to coat the apples with the cinnamon sugar evenly.

For the topping: In a mixing bowl, combine the flour, baking powder, granulated sugar, 1 tsp cinnamon, and salt. Cut the butter/vegan butter into small pieces in the bowl. Rub the butter into the dry mixture, use your fingers. The mixture should be crumbly. Add the milk and combine gently until a dough forms.

Tear pieces of dough off and place on top of the apples. Create little evenly spread out pockets of dough above the apples. Much like a patchwork quilt!

Cover the Dutch Oven with the lid, place directly onto about 7 coals. Using tongs, place 10 -14 coals on top of the lid. Allow to bake for 30 – 40 minutes; check that the topping is golden brown. Remove from the heat and serve hot.

Tip: You can swap the apple out for peach slices, cherries, or any stone fruit. Try adding blueberries to the apples.

  1. Dutch Baby

This German (not Dutch) pancake is easy to make. It is light and fluffy, the perfect summer dessert. You can prep the batter at home for easy cleanup.

Ingredients:

  • 1/2 cup butter
  • 9 eggs
  • 1 1/2 cups of milk
  • 1 tbsp vanilla extract
  • Zest of a lemon
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 4 cups berries
  • 1/4 cup powdered sugar
  • Juice of one lemon

Method:

Campfire prep: Prepare 24 coals and a 12inch Dutch oven.

Batter: In a mixing bowl, combine eggs, milk, lemon zest, and vanilla—whisk in the salt and the flour. Place the Dutch Oven on to 8 hot coals. Melt the butter in the Dutch Oven. Pour the batter into the oven and cover. Place the remaining coals on top of the Dutch Oven.

Rotate the lid 1/4 turn, every 5 minutes. Cook for approximately 25 minutes until the Dutch Baby sets. The cooked dessert will puff up to the lid; once the lid is removed, it will deflate. Remove the Dutch Oven from the heat. Toss berries over and cover with a dusting of powdered sugar and lemon juice. Cover with the lid and allow the berries to warm.

Slice the pancake into 4-6 slices. Enjoy!
