Simple and Delicious RV Meals

Summer is the best time of year for RVing. Warm weather and blue skies make for the perfect vacation conditions, and, for this reason, most RV owners plan at least one trip per summer. One of the many benefits to RV camping is the full kitchen that is provided in most RVs. Cooking some meals in an RV can help vacationers to save money, while still enjoying delicious food. Although most RV kitchens come equipped with the same standard kitchen appliances as kitchens in houses, everything is typically smaller in an RV. RVs also have less counter space. For this reason, many are not sure which meals are best to make in their RV. If the idea of cooking meals in your RV kitchen seems overwhelming, then you have come to the right place. Here, we have compiled a list of the best summer recipes that can easily be made in any RV kitchen or even outside, around the fire. 

Breakfast

For many, breakfast is the most enjoyable meal of the day. Waking up to the smell of bacon, paired with over-easy eggs, toast, and a cup of coffee, is a true American vacation experience like no other. Campfire Breakfast Sandwiches

Here, homemade biscuits meet sausage patties, gooey cheese, and runny eggs, resulting in the perfect breakfast sandwich. This recipe is simple and delicious and will have the whole RV park jealous!

Egg and Sausage Breakfast Roll-ups

This recipe is a fun take on your typical breakfast sandwich. Corn flour tortillas are filled with sausage links, scrambled eggs, and cheddar cheese, before being rolled up and toasted in a hot pan. This easy breakfast is sure to be a fan favorite, especially with kids.

Mini Quiches

This recipe is quite popular, and for good reason. These are completely customizable and can be made with any combination of cheeses, breakfast meats, and vegetables. They can even be made ahead of time and stored in a sealed container for quick and delicious meals on the road.

Campfire French Toast Bake

This simple recipe transforms a loaf of bread into a delicious pan of French toast. It can be cooked over the campfire, on the grill, or in the oven. Talk about glamping with this amazing meal!

Lunch

Hot Ham and Cheese Sandwiches

This lunch is so easy and so delicious. Simply pile croissants with honey mustard spread, deli ham, and Swiss or provolone cheese before warming in the oven or over the campfire.

Philly Steak Sandwich

This sandwich is a crowd favorite and can be easily made over the campfire. Simply slice a large a large Italian loaf most of the way through and stuff with beef, provolone cheese, and any combination of sauteed onions, peppers and mushrooms. This delicious meal is best enjoyed around the fire.

Mac n Cheese

This simple meal can be easily made ahead of time and stored for easy reheating in either the oven or over the campfire. Individual tins make for less mess and easy clean-up.

Hot Dogs and Beans

This camping classic never gets old. Beans and onions sauteed in a cast iron, paired with grilled hot dogs and toasted buns served around the fire is as good as it gets.

Dinner

Dinner is one of the most enjoyable times of day for most families. This shouldn't be any different while camping! Skillet Nachos

Nachos are a classic camp dinner, and they’re even better layered in a cast iron skillet. Brown ground beef, peppers, and onions together, and simply pile this mixture on top of plenty of tortilla chips. Finish with lettuce, cheese, salsa, beans, sour cream, and your other favorite nacho toppings.

BBQ Chicken Foil Packs

There is nothing like a good foil pack meal, and this one is no exception! Grill up some chicken, slice it, and wrap in packs with chunks of pineapple and sauteed bell pepper and onion. Douse in barbeque sauce and cook in the oven or over a fire.

Dutch Oven Lasagna

Lasagna is such an excellent meal, but did you know that you can make it in a cast iron pan? Simply layer the noodles, meat sauce, and cheeses in a skillet and cook in the oven or over a campfire.

Camp ribs

This is another simple and excellent dinner. Stack ribs in a cast iron skillet with plenty of barbeque sauce and cook over the fire or in the oven. You can also cook them individually on the grill.

Sides

Dinner is usually served with a couple of different sides, and that doesn’t have to change just because you are camping. Any of these sides would make an excellent addition to the meals listed here.

Steamed Vegetable Packs

This recipe is so simple and so delicious! Simply wrap your veggie of choice in foil (broccoli and green beans are great), cover with a quarter cup of water, and cook over the fire or in the oven. Add butter, salt and pepper to taste and enjoy!

Mushroom Skillet

For mushroom lovers, this is an easy and delicious side. Slice mushrooms of choice and saute with butter, sliced onions, garlic, and thyme. Serve with burgers or any other meat of choice.

Veggie Skillet

This veggie skillet is a crowd pleaser for sure. Chop zucchini, bell peppers, corn on the cob, onions, and any other veggies of choice and saute in olive oil. Season with salt, pepper, and paprika and serve!

Cheesy Fries

These fries are delicious and mess-free! They accompany burgers, hot dogs, or any other main dish so nicely. Simply slice and season potatoes, and bake in the oven with cheese. Serve with sour cream and chives.

Dessert

No epic vacation is complete without dessert! S'mores are a camping classic, but occasionally you may find yourself craving something new. Try and of these unique takes on old classics for a dessert the whole family is sure to enjoy.

Grilled Peaches

This recipe is so great in the summer. Slice peaches in half and grill face down. Sprinkle with cinnamon and drizzle with honey before enjoying.

S’mores Dip

This recipe is a unique take a summer favorite. Line the bottom of a cast iron skillet with chocolate pieces, and top with marshmallows. Broil until marshmallows are browned and chocolate is melted. Serve with graham crackers.

Campfire Apple Crisp

This recipe is a simple take on an old classic. Simply toast oats in butter and combine sliced apples with spices. Serve warm with ice cream if desired.

Pound Cake and Berry Skillet

This unique dessert is so simple yet so yummy. Slice pound cake and brown in butter before adding berries of choice and Rolo pieces. Cover and warm over a fire for 5-10 minutes, until berries are juicy and chocolate is melted.

Cooking in an RV kitchen doesn’t have to be any more difficult than cooking in a traditional kitchen. In the summer, cooking outside on a grill can be just as fun as cooking inside. Be sure to only build campfires in designated areas, and don't assume you are allowed to at every campground, Boondockers Welcome or Harvest Host location. When in doubt, just keep your meals simple.
